Vegas Bomb Cuppy Cakes

Oh, goodness!  Mom has definitely be on a roll with the baking goods and delicious looking dinners!  Most of my dinners consist of pasta, eggs and toast, meals from the freezer Mom and I've made, eggs and toast, maybe some more pasta... and if I'm lucky, Matt cooks while I study!

But tonight, I've managed to bake again!  Granted, I have been studying between the baked times and set times for my final next week..  This baking project is based off of one of our (Matt, Quin, Brent, myself, and many others) favorite "bomb": peach schnapps, crown royal, and Red Bull!  Matt introduced us to this deliciousness a while back, and Quin helped me solidify my approach to creating a masterpiece cuppy cake!

Fellow students overheard our conversation, so I am told I have to bring some to class tomorrow..  However, the real purpose of the cuppy cakes is for my surprising Kiefer at his going away party!!!  As stated: its a surprise!!  Shush!!

Vegas Bomb Cuppy Cakes

Cake Batter Ingredients:
     White cake batter (store bought) with water substituted with reduced Red Bull

Cake Batter How To:
     1.   Bring Red Bull to a boil then reduce heat to simmer for about 30 minutes.
     2.   Mix cake batter as per directions.
     3.   Bake cake as per directions.
     4.   Let cool.
     5.  Poke with toothpick many times for next step!

Peach Schnapps Filling Ingredients:
     Peach Jello
     Peach Schnapps
   
Peach Schnapps Filling How To:
     1.   Mix Jello as per directions, substituting cold water with Peach Schnapps.
     2.   Pour over cooled cuppy cakes (it will make a mess, so I put a cookie sheet under my cuppy cakes!)
     3.   Let firm up in the fridge.

Crown Whipped Frosting Ingredients:
     1 C whipping cream
     1 Tbsp Crown Royal (I used about three...  I wanted more flavor!  And more alcohol!)
     3 Tbsp powdered sugar (I used four)

Crown Whipped Frosting How To:
     1.   Whip whipping cream until cream whippy.
     2.   Add powdered sugar and Crown Royal and whip again.
     3.   Apply to top of cuppy cakes once Peach Schnapps is firm.

Cross fingers and hope it tastes good!

Oreo Cookies and Cream Chocolate Cake Bars

The last recipe for the weekend needed to be chocolate.  We can't have a party without chocolate!  These are delicious!  My nephew said they were the best things he had ever tried!  :) 

Oreo Cookies and Cream Chocolate Cake Bars

Ingredients
1 Devils Food Cake Mix
1/2 Cup butter, softened (1 stick)
1 large egg
1 1/2 cups chocolate chips
1 14 oz can sweetened condensed milk
14 Oreo Cookies, broken into pieces

Instructions
1.  Preheat oven to 350 degrees F. Line a 9 x 13 inch pan with foil.  Spray with Pam (or generic).  I just like the name!  haha.
2.  Pour cake mix into a large bowl.  Add egg and butter.  Mix to combine.  I used my hands as it works much better and quicker.  Press into greased baking pan. 
3.  Top with broken pieces of cookies and chocolate chips.
4.  Pour sweetened condensed milk over cookies.  Bake for 25 minutes (until cooked through).  Remove from the oven.
5.  Cool for 5 minues.  Run a knife around edges to loosen.  Cool completely.  Lift bars out of pan with foil.  Cut into squares.  (I cut them smaller because they are rich). 

Mixed Berry Cobbler

To go along with the soups we needed a dessert!  :)  We had a bag of mixed frozen fruit in the freezer just calling for a dessert!  So I googled mixed berry dessert and found Berry Cobbler!  This receip was so easy and was also well liked (I didn't try it because I am not a mixed fruit person)!  haha. 

Mixed Berry Cobbler
Ingredients
Two 12-oz bags frozen mixed berries (I used a half a bag from Sams.  It was enough to cover the bottom of the pan and then some.  I also added frozen strawberries that were in the freezer). 
1 box white cake mix (no pudding) - I used yellow.
1 can of 
diet 7-up or sierra mist (clear soda)

Instructions
Grease 9 x 13 inch pan.  Place frozen fruit in the pan. Sprinkle dry cake mix over the top. Pour soda slowly over cake mix. DO NOT stir the cake mix and the pop.  If you do not stir it will give you a 'crust'  But if you stir the two, you will hsve a cake like topping.

Bake 350 for 45-50 min.

Smoked Squash Wild Rice Soup

The next recipe for the weekend was Smoked Squash Soup.... but Paul likes wild rice so that was added to it.  This was also a hit but wasn't gone (but I also made twice as much)!  It will freeze well. 

Smoked Squash Soup

3 oz smoked squash
1 quart chicken broth
1 medium size squash
4-5 peeled apples

3-4 cups cooked wild recipe

Smoke 1 squash in smoker.  Split and bake 1 squash until done, approximately 375 degrees F oven for 45 minutes.  Scoop from the skin, add to broth and wild rice.  Mix, heat and enjoy or add spices of your choice.  Suggested spices:  pumpkin pie mix, nutmeg, cinnamon, cloves or curry and black pepper for a “hotter” flavor.

Cheeseburger Soup (with Beer)

The weekend was a weekend for cooking and baking!  All new recipes.  Thanks for everyone who tried them out.  :)  We had a Packer - Viking gathering!  (we were out numbered by viking fans!)  Thank goodness the Packers won! 

So what better to make on a Packer - Viking game than CHEESEburger Soup (with beer).  The original recipe didn't call for beer but the soup thickened while cooking and beer cheese soup was another recipe I always wanted to try.  The soup was a hit!  It was gone by the end of the game.

Beer Cheese Wild Rice Soup with beer!

Ingredients
1-2 lbs ground beef (browned)
1 container of Philadelphia Cooking Creme
10 slices of bacon (browned & crumbled - I used microwave bacon)
1 bag frozen hashbrowns
2 lb block of Velveeta Cheese
2-3 cups chicken broth stock
1 can beer

Instructions
1.  Brown hamburger
2.  Cook bacon until crisp then crumble
3.  Melt velveeta cheese and add cooking cream, mix together.
4.  Add chicken broth and beer to cheese, mix well
5.  Mix hamburger, bacon and hashbrowns into cheese, broth, beer mixture. 
6.  Pour into crockpot. 
7.  Cook on high 4-5 hours. 
8.  Serve with fried onions and addtional crumbled bacon if desired.
